Yummy IBS friendly Gluten-free Oatmeal bites

I get a busy hectic life , and need to feed/ fuel to keep going . I also get having #ibs and #foodintolerances !  Finding recipes and foods that support but don’t cause distress has been a journey.. on top of my particular palate . 

Sharing a recipe for these amazing oatmeal/banana bites.

These are filled with goodness and supportive of my #gut . A great addition to my breakfast routine. 

They are made with oatmeal/banana bites with walnuts, dark chocolate , cinnamon/nutmeg .
No added sugar! Bananas bring the sweetness. 

The recipe is so simple and easy to make…
2 ripened bananas
1 cup Bob’s Red Mill gluten free oats
1/4 cup chopped walnuts 
1/4 cup dark chocolate bits
Nutmeg to desired taste
Cinnamon to desired taste

Preheat oven to 350F and prep cookie sheet with layer of parchment paper.

Peel and mash the bananas to smooth consistency. Sprinkle in nutmeg and cinnamon and fold into bananas to get consistency. These spices are optional. Add in chocolate bits and mix then walnuts. Mixing the last two ingredients to distribute evenly. Then start fading the oatmeal and mixing until you get consistency. 

Once all the ingredients are mixed you can use small ice cream scoop to create the bite size balls and place on cookie sheet. 

Bake for 15 min. Each small oatmeal bite is about 100 calories if you are counting ☺️.

Love them as they have a lot of good nutrients, energy, fiber. Easy to make and easier to grab when needed especially to take on the road. 

You know the challenge with eating and #ibs ?!! Finding foods that work with my body so important!
